This quick meal was sent to me by my friend and super busy momma of two, Corrie! It originally came from Zoe’s kitchen. It’s their Orzo tabouli. Zoe’s puts it over some salad, but Corrie told me she just ate it like this and it was great!
Mix all the stuff below together!
1 quart cooked orzo pasta
1 cup diced tomato
1 1/2 diced cucumber
2 tbsp finely chopped mint
1/2 cup chopped parsley
2 oz fresh zesty dressing
1 tsp salt
1 tbsp fresh lemon juice
