Avocado Bruschetta Recipe

  • ½ ripe avocado - pit removed
  • ¼ cup diced tomato
  • 1 tbsp fresh chopped basil
  • 2 tbsp agave syrup
  • 1 tbsp balsamic vinegar
  • 1 tsp black pepper
  • ½ cup arugula
  • ½ cup salad sprouts
  1. Place the arugula and the sprouts on a plate with the avocado half.
  2. In a small bowl, combine the diced tomato and the basil.
  3. In another small bowl, combine the agave, balsamic, and pepper.
  4. Spoon the tomato mixture into the center of the avocado half, drizzle the balsamic dressing over the top, and serve.
