Strawberry Oatmeal Muffins Recipe

Serves: 4 servings
  • 1 cup flour
  • 1 cup quick oats
  • ½ cup sugar
  • 1 tsp vanilla
  • 1 tbsp flax seeds
  • 1 cup fresh sliced strawberries
  • ½ cup plant-based milk
  • ½ cup plant-based buttery spread
  • 1 tsp baking powder
  • ¼ tsp salt
  1. Preheat the oven to Bake at 350°F.
  2. Finely grind the flax seeds in a blender or food processor.
  3. Pour the seeds into a large mixing bowl and add the plant-based milk.
  4. Allow the mixture to sit for a few minutes while you gather the rest of the ingredients.
  5. Add the rest of the ingredients to the bowl and combine well.
  6. Spoon the mixture into a coated muffin tin or muffin cups with liners.
  7. Fill the cups only half way full.
  8. Bake the muffins 30 minutes.
