Pinto Potato Pepper Bowls Recipe

Serves: 4 servings
  • 1 - 15oz can pinto beans - rinsed & drained
  • 1 - 15oz can sliced potatoes - drained
  • 1 red bell pepper - rinsed & sliced
  • 2 tbsp water
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 fresh sliced scallions
  1. In a large sauté pan heat the potatoes, beans, and peppers, over medium-high heat, stirring occasionally, for eight minutes.
  2. Add the spices and cook for one more minute before removing from heat.
  3. Top with fresh chopped scallions before serving.
