The Engine 2 Cookbook by Rip Esselstyn is one of my favorite plant-based recipe books to have on hand in my kitchen. Like many books, it serves as a go-to for inspiration, motivation, and darn good recipes. The “Badass Banana Bread” that is featured in the book is hands-down the best bread I have ever made. The best thing about it is that it contains no oil, no sugar, and a TON of taste. My kids come running to the kitchen as soon as I take it out of the oven.
This banana bread recipe is made like most other breads with dry ingredients and wet ingredients.
