Peppermint Coconut Ice Cream

Serves: 6 servings
  • 1 14 oz can coconut milk
  • ½ cup sugar
  • ½ cup crushed candy canes
  • ½ tsp peppermint extract
  1. In a large bowl combine all of the ingredients and cover well before placing in the freezer.
  2. Every hour for four hours, check the ice cream and scrape down the frozen sides of the bowl to incorporate the frozen portion with the still melted ice cream in the center of the bowl.
  3. Serve with a candy cane or a holiday cookie or two.
