Vegan Kale Salad Recipe That You Will Actually Eat

  • 2 leaves of kale - well rinsed & thinly sliced
  • ½ cup dried cranberries
  • ¼ cup sliced almonds
  • 1 cup garbanzo beans - rinsed & drained
  • 5-10 cherry tomatoes - sliced in half
  • juice from ½ a lemon
  • 2 tbsp balsamic vinegar
  • salt & pepper to taste
  1. Make sure to remove the ribs from the kale before slicing it into thin ribbons.
  2. In a large bowl, combine all of the ingredients and toss them gently until the salad is well coated in the dressing.
  3. Salt and pepper to taste and serve.
