Vegan Spinach Cream Pasta Recipe

  • 12 oz dry pasta
  • 4 cups walnut milk
  • 8 oz frozen spinach
  • 1 cup walnuts
  • 1 tsp coriander
  • salt & pepper to taste
  1. Boil the pasta according to the directions on the package
  2. In a medium sized pot heat the milk, spinach, walnuts, and coriander, over medium-high heat, until the sauce comes to a boil
  3. Reduce the heat to medium and allow the sauce to boil for seven minutes, stirring often
  4. When the pasta is done cooking, drain it
  5. Then add it to the sauce and remove the sauce from the heat
  6. Salt and pepper to taste
  7. Serve immediately
