Ingredients
  • 1 can butter beans - rinsed & drained
  • ½ cup sun-dried tomatoes - julienned
  • 1 package microwaveable rice
  • 2 handfuls fresh rinsed spinach
  • 8 white mushrooms - rinsed & sliced
  • 2 tbsp water
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt & pepper to taste
Method
  1. In a large sauté pan, cook all of the ingredients over medium high heat, for five to seven minutes, stirring often.
  2. Add salt and pepper to taste and serve while piping hot.
